Kid Friendly Recipes for Your Picky Little Peanut

sometimes getting your child to eat something, can be the trickiest part of the day.  With kids taste buds changing, what seems to be everyday, it is nice to have some easy kid friendly recipes on hand! Here are 5 super easy and tasty recipes for kids.

Kid Friendly Recipes: Quick Chicken Quesadillas

Ingredients:
  1. 6 oz of refrigerated cooked Southwest-flavor chicken breast strips
  2. 1/2 cup Old El Paso™ Thick ‘n Chunky salsa
  3. 1 package Old El Paso™ flour tortillas for burritos
  4. 2 cups finely shredded Colby-Monterey Jack cheese blend
  5. 1/4 cup sour cream
Cooking Directions:
  1. Cut chicken into bite-size pieces.
  2. In small bowl, mix chicken and salsa together.
  3. Spray 1 side of 1 tortilla with cooking spray; place sprayed side down in 10-inch nonstick skillet.
  4. Layer with one-fourth of the chicken mixture and 1/2 cup of the cheese.
  5. Top with another tortilla; spray top of tortilla with cooking spray.
  6. Cook uncovered over medium heat 4 to 6 minutes, carefully turning after 2 minutes, until golden brown.
  7. Repeat with remaining tortillas, chicken mixture and cheese. To serve, cut quesadillas into wedges. Serve with sour cream and, if desired, additional salsa.

Kid Friendly Recipes: 4 Ingredient Pizza Bake

Ingredients:
  1. 2 pouches (7.5 oz each) Bisquick™ Complete buttermilk biscuit mix
  2. 1 cup Water
  3. 1 jar Pizza Sauce (14 oz)
  4. 1 Package Sliced Pepperoni (8 oz) [optional]
  5. 2 cups shredded Mozzarella Cheese (8 oz)
Cooking Directions:
  1. Heat oven to 375°F.
  2. Spray 13×9-inch glass baking dish with cooking spray.
  3. In medium bowl, stir Bisquick mix and water until soft dough forms.
  4. Drop half of dough by spoonfuls evenly in bottom of baking dish (Note: dough will not completely cover bottom of dish)
  5. Drizzle about 1 cup pizza sauce over dough.
  6. Arrange 1/2 of the pepperoni slices evenly over sauce.
  7. Top with 1 cup of the cheese.
  8. Repeat layers with remaining dough, pizza sauce, pepperoni and cheese.
  9. Bake 20 to 25 minutes or until golden brown.
  10. Cut into squares to serve.

Kid Friendly Recipes: Tater Tot Casserole

Ingredients:
  1. 3 tablespoons extra-virgin olive oil
  2. 1 yellow onion, chopped
  3. 1 pound ground beef
  4. Salt and pepper, to taste
  5. 1 cup frozen green beans
  6. 1 cup frozen corn
  7. Two 10.75-oz. cans cream of mushroom soup
  8. 2 tablespoons ketchup
  9. 1 tablespoon Worcestershire sauce
  10. 32-oz. bag frozen tater tots
  11. 1 1/2 cups sharp shredded cheddar cheese
Cooking Directions:
  1. Preheat oven to 350 degrees F.
  2. Coat a 9×13 baking dish with cooking spray and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add onion and cook, stirring, until tender and fragrant, about 3 minutes.
  4. Add ground beef and cook until no longer pink. Drain grease from pan and add salt and pepper to onions and beef.
  5. Add green beans, corn, soup, ketchup and Worcestershire sauce to the skillet.
  6. Cook over medium heat for 5 minutes and pour in an even layer into prepared baking dish.
  7. Top with the tater tots (in a single layer), followed by the cheese.
  8. Bake in the preheated oven for 40-45 minutes or until tater tots are lightly browned and cheese is melted.

Kid Friendly Recipes: Parmesan Fish Sticks

Ingredients:
  1. 1/3 cup all-purpose flour
  2. 1/2 teaspoon salt
  3. 1/8 to 1/4 teaspoon pepper
  4. 2 large eggs
  5. 1 cup panko (Japanese) bread crumbs
  6. 1/3 cup grated Parmesan cheese
  7. 2 tablespoons garlic-herb seasoning blend
  8. 1 pound tilapia fillets
  9. Cooking spray
Cooking Directions:
  1. Preheat oven to 450°.
  2. In a shallow bowl, mix flour, salt and pepper.
  3. In another bowl, whisk eggs.
  4. In a third bowl, toss bread crumbs with cheese and seasoning blend.
  5. Cut fillets into 1-in.-wide strips.
  6. Dip fish in flour mixture to coat both sides; shake off excess.
  7. Dip in eggs, then in crumb mixture, patting to help coating adhere.
  8. Place on a foil-lined baking sheet coated with cooking spray.
  9. Spritz tops with cooking spray until crumbs appear moistened.
  10. Bake 10-12 minutes or until golden brown and fish just begins to flake easily with a fork.

Kid Friendly Recipes: Chicken and White Cheddar Spaghetti

Ingredients:
  1. 3/4 lb. thin spaghetti
  2. 3 tablespoons butter
  3. 1 cup diced yellow onion
  4. 2 tablespoons all purpose flour
  5. 1 cup chicken stock
  6. 1 cup milk
  7. 1/2 lb. grated sharp white cheddar cheese
  8. 1 tablespoon chopped pickled jalapenos + 1/2 tablespoon juice
  9. 1/2 teaspoon cumin
  10. salt & pepper, to taste
  11. 2 cups cooked, shredded chicken
  12. 3 tablespoons chopped cilantro
Cooking Directions:
  1. Bring large pot of water to boil.
  2. Cook spaghetti to al dente and drain.
  3. Remove hot pot to burner.
  4. Melt butter and saute onions until softened, about 5 minutes.
  5. Stir in flour and cook 2 minutes. Slowly whisk in chicken broth and milk to prevent lumps. Increase heat to thicken sauce.
  6. Sprinkle in grated cheese and stir continuously to melt into sauce evenly. Stir in cumin, salt, pepper, jalapenos, jalapeno juice, chicken, cooked spaghetti and cilantro.
  7. Toss to coat everything evenly in sauce.
  8. Taste and adjust seasonings.
  9. Serve warm with more cilantro.
